[00:02:06] You can even find a link to all the news that I'm about to share with you today on the low and slow

[00:02:13] Barbecue show here is the low-down

[00:02:16] Paul Mira is the best Texas barbecue in America story number one today

[00:02:21] That's right. Texas Monthly says Paul Mira barbecue is best Texas barbecue outside of Texas, of course

[00:02:29] Barbecue editor Daniel Vaughan also included two North Carolina locations in his top 10 list

[00:02:34] That's prom barbecue in Nightdale as well as John G's barbecue in Peachland

[00:02:39] We've had John G here on the show

[00:02:41] It does Karen his family there the Kirkmans in Peachland doing a great job with barbecue

[00:02:47] So cool to see them on the list

[00:02:48] In fact, here's the top 10 there from the barbecue snob number ones Paul Mira again

[00:02:54] I mentioned prom barbecue in it number two

[00:02:57] It's Owens and Hall in Georgia at three

[00:03:00] Moosecraft barbecue in California at number four number five's heritage barbecue

[00:03:06] Southern Junction barbecue in New York

[00:03:08] Pica Rica barbecue in Utah

[00:03:11] And then it's John G's at number eight out of Peachland again in North Carolina at number nine edgecraft

[00:03:17] Barbecue from Oklahoma and it's golden hour barbecue in Nebraska

[00:03:21] That rounds out the top 10 there of the best Texas barbecue in America according to Daniel Vaughan's Texas Monthly

[00:03:29] Damp good barbecue who gets a salute North Carolina state-by-state breakdown there from a barbecue snob in

[00:03:37] South Carolina Vaughan also highlights Fort Grove barbecue

[00:03:40] That's Dylan cook and he talks about city limits barbecue

[00:03:44] Robbie Robinson and Louis barbecue as well down in Charleston all great barbecue in South Carolina

[00:03:50] And I also want to shout out and Vaughan's honorable mentions aren't necessarily Texas

[00:03:54] He says but they are worth the recognition among those county smoke and Lynchburg, Virginia

[00:04:00] That's our buddies kid and Jess S

[00:04:02] They're in Lynchburg and now that football season is striking up

[00:04:06] You'll get their barbecue at the Liberty football game

[00:04:08] So look for that out there as Ken and Jess Hesse at County smoke

[00:04:12] So he gets a shout out there and the it's not Texas but honorable mentions also Lawrence barbecue and Durham barbecue

[00:04:18] That's in North Carolina again Lawrence and Durham as well as King barbecue in Charleston on the honorable mentions for Daniel Vaughan

[00:04:26] I read all of his coverage for

[00:04:28] The commentary about Texas barbecue in Texas monthly. He visited

[00:04:33] 149 Texas style barbecue joints in 30 states

[00:04:36] You can find all that at Texas monthly if you visited it for the first time

[00:04:40] You'll get in for free after you've clicked it for 15 or 20 times like I do you'll have to pay up

[00:04:45] But you might want to do that. It's good content. So also back to our next story

[00:04:50] Pym Paul Mira is in that as well

[00:04:53] Pomea barbecue also top the chart for Southern Living's best new barbecue

[00:04:58] Restaurants and those are the restaurants that have opened since 2021

[00:05:01] This is compiled by a barbecue editor for Southern Living Robert Moss

[00:05:05] And he just judged the list based on the enjoyment of the meal and overall experience of the visit again

[00:05:13] Paul Mira comes in at number one some of those other familiar names

[00:05:18] Coming in along the list as well

[00:05:20] Beside Paul Mira city limits from West Columbia. We just mentioned them King barbecue from North Charleston longleaf swan

[00:05:28] From Raleigh Rancho Lewis Rancho Lewis in Charleston smoking but heads in Spartanburg

[00:05:35] Lichon Lechon Latin barbecue and bar I'm sure I said that wrong in Raleigh and Huli Suze in Asheville

[00:05:41] And Huli Suze is getting a lot more of attention here lately. I hear that's really great stuff

[00:05:46] She kind of rounds out the list there for the top best new barbecue joints

[00:05:51] According to Southern Living again Paul Mira is on there and we've talked about him here in these last couple of

[00:05:57] Sort of lists here and one thing again. We mentioned them

[00:06:01] They open in February we had an episode talking about our visit there and they really kind of blend South Carolina

[00:06:07] Texas and Puerto Rican flavors there go and get the beef cheeks

[00:06:11] So we're on our list our list high horse

[00:06:14] We're gonna keep it rolling here the best 10 states for barbecue and again

[00:06:19] The Carolinas lead the list and I will confess this list

[00:06:22] The quality or I guess the resource defaults drastically from the barbecue snob Daniel Vaughan in Texas monthly and

[00:06:31] Robert Moss esteemed barbecue editor editor for Southern Living, you know

[00:06:36] I'm sure geography king is no slouch

[00:06:39] In his report for the top 10 states for barbecue with RV travel

[00:06:44] But he still has compiled a list so he's he's given this list as being declared as factual and accurate and

[00:06:51] Number one on the list for geography king

[00:06:55] I'm sorry is Missouri nothing wrong with that

[00:06:58] His geography king says where the big barbecue cities like st. Louis and Kansas City provide plenty of show me

[00:07:04] To rank them at the top on that list South Carolina number two

[00:07:09] So maybe maybe geography king knows what he's talking about

[00:07:12] He loves the whole hog barbecue the vinegar pepper sauce mustard based sauce

[00:07:17] And of course that means that much love for the Carolinas puts us in North Carolina at number three

[00:07:24] Where we're again recognized for a whole hog barbecue

[00:07:27] But he throws in some love for the tomato base sauce that he calls from the

[00:07:31] The northern part of the state, so I'm not exactly sure which part that is

[00:07:37] I mean, you know, I know where the tomato base sauce is, but I'm not sure which section is the northern base

[00:07:42] That's me being a geography snob with the geography king

[00:07:45] I'm sure also good news about his list Texas is number four

[00:07:48] No need to say any more about that list, but I'll tell you more about another list

[00:07:55] best barbecue in Charlotte a

[00:07:58] Charlotte five and the Charlotte observer put all that together here

[00:08:02] I guess since the middle part of August they started out with about 50 entries for barbecue places

[00:08:08] From as far as an hour away from Charlotte. Everybody got in the votes

[00:08:13] You got to vote through several rounds of it

[00:08:16] Also, I say I threw my name in there and voted for a couple of my favorite folks and some of the finalists that again familiar people

[00:08:23] Folks we've had on the podcast. We've got their blogs and content at low slow BBQ show calm

[00:08:29] It's garen Kirkman at John G's midwood smokehouse

[00:08:33] I haven't had red bridges barbecue on the show

[00:08:36] But I've been there and is great and Ed Marci Moa's from resident culture sweet lose

[00:08:40] The final round of voting wrapped up just after

[00:08:44] September 3rd and that final round put in the victory seat

[00:08:49] The pit I can't believe I've skipped over this right the smoke bit

[00:08:55] They defeated red bridges barbecue lodge

[00:08:59] With 10,000 total votes cast congratulations to the smoke pit

[00:09:03] I will say

[00:09:04] That the smoke pits good haven't been there if it's good they've got four locations Concord Gastonia Monroe in Salisbury

[00:09:13] Red bridges barbecue lodge. There's just one of those

[00:09:18] So take that for what it is check it out at the Charlotte observer Charlotte 5

[00:09:22] That's the best barbecue and Charlotte voting. Those are some of the list that we've seen again

[00:09:28] You know kind of take it for its worth. That's a rare choice award. Does that mean anything to you?

[00:09:32] Does it mean anything to me a competition judges taste? I'm sure is very different

[00:09:38] While I'm talking about list

[00:09:39] I gotta get one more in here from from the news that we've shared and we've gathered up and put out in the lowdown newsletter

[00:09:48] Over the summertime and this one. I really enjoyed again

[00:09:51] It's about the Carolina news story education North Carolina

[00:09:54] They know the Tar Hill state better than many organizations here

[00:09:58] They go across the state advocating for students and trying to keep representatives on the road

[00:10:03] You know spanning the roads all the way from Cherokee to Maneo if you know geography, that's all the way at the east and the west

[00:10:09] I don't know where the north is in all that but Cherokee to Maneo east to west

[00:10:14] So naturally the education NC folks are visiting and eating in all the states 100 counties

[00:10:20] And they did a nice job. Bevin rash shared her favorite food stops along the way

[00:10:25] Check it out education NC and that list included plenty of barbecue businesses

[00:10:31] You know, I'm sure you could find a hundred counties and a hundred barbecue visits

[00:10:36] But the variety is a spice of life, right? So mevin has put it together a list

[00:10:42] There's got 15 barbecue places on it many of those places

[00:10:45] Like I said, the low and slow barbecue show has visited among those smoke on barbecue in Transylvania county

[00:10:52] More about them in just a moment

[00:10:54] And some of the others I'll share with you all this I'll put on the blog at low slow bbq show.com

[00:10:59] So you got the list the list has the links to all these restaurants again put together by

[00:11:03] Mevin rash from education North Carolina and I'll share a link to her story too

[00:11:08] So great stuff. You have the full list. It wasn't wanted to call out here around the area again from

[00:11:12] From Cherokee to Maneo. Let's start with Cherokee dragon ass smoked barbecue. That was their favorite stop there

[00:11:20] In Cleveland county, it's red bridges barbecue lodge. They get some love there again too and Davidson county

[00:11:26] What am I all-time favorites Lexington barbecue? That's the honeymonk of course or folks who didn't know in Transylvania county

[00:11:34] I mentioned smoke on barbecue. That's in Brevard. It's actually a drive through barbecue

[00:11:39] I don't know how many of those that are you know specific to being a drive through

[00:11:43] But I guess you could walk up to it as well

[00:11:46] But smoke on barbecue in Brevard is is really good and then in Wilson Parker's barbecue some of their favorites

[00:11:52] They also in Pitt County mentioned skylight in and bees barbecue could not decide between the two

[00:11:58] So they just named both of them again

[00:12:00] Those are just some of the 15 barbecue restaurants or that they shared with their readers at education

[00:12:06] NC get the whole list again at low slow bbq show.com or check it out on the internet education in

[00:12:12] Sam sure you can find it hundred county list

[00:12:15] All the favorite barbecue stops

[00:12:18] Some of the other news over the lowdown during the summer

[00:12:22] Fire destroyed new facilities at operation barbecue relief camp operation barbecue relief. That's camp obr

[00:12:29] You might remember we spoke with the founder of camp operation barbecue relief on the show

[00:12:36] Right there before the carolina barbecue festival. They got a great camp. They've been building there

[00:12:40] It's for for military members and veterans first responders

[00:12:44] Families have fallen heroes unfortunately an electrical fire destroyed the new facilities

[00:12:49] They were just being completed there at camp obr

[00:12:53] And what they understand is that insurance coverage is supporting the rebuilding efforts, but

[00:12:58] Operation barbecue relief is really counting on community support to restock

[00:13:03] Many of the supplies essential items that are needed by guests

[00:13:06] So this all happened in july that we're already getting a lot of things put back together again

[00:20:14] All this is side an old furniture warehouse in downtown carry

[00:20:19] It's a 4900 square foot space

[00:20:22] Probably seat close to 250 and then in the dining room in front porch

[00:20:27] And jake wood tells the the guys there at the

[00:20:30] Raleigh news and observer that he's planning a new menu

[00:20:33] He's going to lean more into the unique style of queue and hospitality as he told the news and observer

[00:20:40] He also says that new location is going to feature a floating oyster cart

[00:20:44] As you know, if you've listened to the episode with jake that really follows the the dreams that he shared about

[00:20:50] You know having something that combines some really cool stuff all his favorite things

[00:20:55] Like oysters and barbecue. What better parent can you have for north carolina?

[00:21:00] So he's gonna have all that in one place again opening up in

[00:22:28] So congratulations to him on this next chapter for him and his barbecue journey

[00:22:33] A couple of other barbecue business news iron city barbecue is opening in blacksburg

[00:22:43] A new owner has quit his job and took out a second mortgage on his own

[00:22:48] He's opening up iron cities. He's already kind of built a customer base through catering jobs and working his food truck

[00:22:54] And again, this is a familiar stare story as a a lot of people we've talked to do a similar thing

[00:23:00] This is the blacksburg area of south carolina

[00:23:03] And this is coming as blackbird is actually considering a multi-million dollar streetscape plan

[00:23:10] Um, they've made annexations. There's been new homes constructed

[00:23:13] So jason merit may be taking a chance at the right time with iron city barbecue in blacksburg

[00:23:19] If you get by there check him out

[00:23:22] More news from friends of the show. That's from back draft barbecue

[00:23:25] They've launched a rub is now available in loaves food stores of south carolina

[00:23:31] You can find it in mount pleasant summerville charleston

[00:23:34] Hand-of-hand just just look at the blog. I've got the locations and the addresses there

[00:23:38] Just keep your eyes peeled if you're in south carolina at loaves foods

[00:23:42] Look for back draft barbecue. Again, he's one of the competition barbecue cooks that we've talked to over the past summer

[00:23:51] Eric carpenter and his bunch do a great job there. So look for him back draft barbecue

[00:23:55] He's going to be in low country public's locations in october as well

[00:23:59] Uh, no more business news monkey wrench

[00:24:03] Smokehouse is closing in travelers rest. That's a location

[00:24:07] Is actually going to be shutting down or it shut down a little bit earlier in august

[00:24:12] A good news is there'll still be barbecue coming from that location

[00:24:15] It's now going to be sbh barbecue

[00:24:18] Apparently the restaurant owners from monkey wrench smokehouse have decided to put all their focus on sidewall pizza company

[00:24:25] They got already have four pizza shops around the the area of travelers rest

[00:24:29] And so now the uh, the site for monkey wrench is going to be sbh barbecue and that will actually be their second location

[00:24:36] Um, and the second that will be open in the past four months. So congratulations to sbh barbecue

[00:24:43] Good luck to you monkey wrench

[00:24:46] Want to talk for just a moment about what i've been reading

[00:24:50] First of all, how long does that pull pork last in the refrigerator? Is this pork still good?

[00:24:57] I mean i made it on fourth of july, you know, and that's the question we've all faced for a long time and

[00:25:02] Just for reference if it was from the fourth that threw it out

[00:25:05] It may still be out there from labor day, but I mean we're getting close. So keep it

[00:25:12] The usda however recommends these time frames for pork products

[00:25:17] And this is thanks to dietician chelsea edwards. She's with the southern living magazine

[00:25:22] And she says or the usda specifically says raw pork

[00:25:27] Use it within three to five days of purchase or freeze it

[00:25:30] cooked pork consume it within three to four days. So

[00:25:36] Oh boy that labor day pork may be going off by now. So frozen pork consume it within six months

[00:25:42] For the best taste no, I got choked up about throwing away the pork

[00:25:48] But if it's frozen consume it within six months again, that's from southern living dietician

[00:25:53] Chelsea edward probably some pretty good advice pretty good advice coming as well from barbecue brothers

[00:25:59] barbecue bros if you will they they are celebrating resident culture as they

[00:26:04] Now officially expanded into the top tier of charlotte barbecue according to to the bros

[00:26:10] Also some reading from the smoke sheet. They took a dive into eastern tennessee barbecue

[00:26:15] Uh self-described barbecue

[00:26:18] Q oligest bb q oligest ed riley takes a nice look into uh eastern tennessee barbecue

[00:26:25] And of course tennessee has three distinct regions of barbecue and he talks about you know, what uh each

[00:26:33] Section includes and gives you some of the best bets near noxville chattanooga johnson city as well

[00:26:39] All that as at the smoke sheet. So a couple other things have been reading

[00:26:44] Food a love story

[00:26:46] That's from jim gaffigan is pretty funny. It takes a look at all the foods in america's various food fetishes

[00:26:52] You know, we've got them barbecue may or may not be in the fetish category. It's okay

[00:26:58] I guess

[00:26:59] Check out food a love story. I've been reading. What are you getting wrong about apalachia by elizabeth cat?

[00:27:06] I'll just leave it at that dogland passion glory and lots of slobber

[00:27:10] At westminster dog show if you know anything about the charlotte region. That's from tommy tomlinson

[00:27:16] Um a really great writer for the charlotte observer for many many years from georgia writes a great book is kind of the best of show

[00:27:23] Uh, if you've seen the movie the best in show

[00:27:25] That's the best in show of books again dogland passion glory and lots of slobber at westminster dog show

[00:27:32] so

[00:27:33] I got some tips. I want to share with you here before we wrap it up pretty quickly and those are thanks to mrs

[00:27:39] Chigger she's giving me the idea that maybe i ought to help the audience some more now that fall is is almost here

[00:27:45] Some cleaning tips might be a good idea and so

[00:27:52] So I went on the internet and I searched for fall smoker maintenance

[00:27:57] And ai had plenty to say and I try to skip those ai suggestions

[00:28:03] At least those ones at the top and go do I know down there a little ways down the list

[00:28:07] Where somebody probably created something that might be worth reading

[00:28:11] And the american barbecue systems is at the top and they say number one heat the grill to 400

[00:28:17] Use a wire brush to remove all the stuff from grates and smoker just brush it all down

[00:28:24] wipe it all down

[00:28:26] And then season your smoker

[00:28:31] You get an high point burn high burn point oil

[00:28:34] Coat the inside walls the door the lid the racks of grates

[00:28:39] Let all that sit there for 10 minutes do that for two or three times a year

[00:28:42] So that's what you do. You should do that every every week every time you use it

[00:28:48] Except for the seasoning part

[00:28:51] sounds like a lot

[00:28:53] So they recommend you also do a deep clean once or twice a year depending on how much you use it

[00:28:59] Or in that case you want to do a clean burn

[00:29:02] That means light your smoker with the vents wide open burn off all the residues

[00:29:06] Then allow it to cool fully

[00:29:09] Then you'll wash and degrease just clean the smoke with warm water and the degreaser detergent

[00:29:15] Get to steel brush and scrape off any unwanted rust pots

[00:29:20] Using a steel brush rinse it all down let it air dry and after fully cleaning

[00:29:25] Let it dry

[00:29:27] Then you'll want to re-season it using that deep clean

[00:29:30] With the oil the high point burning oil

[00:29:33] Rub it down good for optimal performance

[00:29:36] So that is the recommendation of the american's

[00:29:39] barbecue systems now as this chigger ever claimed the Weber smoking mountain like that

[00:29:45] and

[00:29:46] no

[00:29:48] That's what they recommend so to comply with mrs. Chigger suggestion. There it is some recommendations for fall

[00:29:55] You do what you got to do

[00:29:57] That's what american barbecue wants you to do let's talk about some events quickly
